Tasting note

Fine, elegant and mineral, with delicate citrus, green apple and subtle brioche notes. Creamy yet refreshing, it finishes long, dry and lightly saline.

Food pairing

Perfect with: Seafood, sushi, cured meats and celebrations. Also excellent alongside fried food, where its crisp acidity and fine bubbles cleanse the palate after every bite.

Vinification

Freshness and purity are preserved by hand-harvesting followed by gentle (whole bunch) pressing, then immediate racking and fermentation at a controlled temperature. The wine is then matured on the lees for at least 6 months, and second fermentation takes place in the bottle. The wine matures for a minimum of 36 months.

The Producer

Rebolium was created by two neighbouring winemakers, one in Italy and one in Slovenia, who first met while studying in Trieste. United by the Rebula (Ribolla Gialla) grape and a shared cultural heritage, they combined fruit from both sides of the border to produce one of Europe’s first cross-border wines: a traditional method sparkling wine that celebrates cooperation, terroir and a borderless vision of Europe.
